Additional Instructions for the 13" and 16" Maturi Kamado Barbecue

When taking delivery of your barbecue, be sure to enlist the help of a friend! Our barbecues are very heavy and can weigh up to 100kg. It will take two or three people to safely move the barbecue to its desired location.
When assembling your Maturi barbecue, make sure to fully read and follow the included instructions within the box. These instructions supplement those and do not explain the construction process fully. If you misplace the enclosed instructions, you can find a PDF copy of them here.
Included with your barbecue is a screwdriver and spanner - These are the only tools you will need to assemble your barbecue, apart from 2-3 pairs of hands!


Carefully remove all parts of the barbecue from its packaging within each layer and check against the ‘Parts List’ within the printed instructions. Please note that some of the parts might already be part assembled. The extra tools included with the barbecue (such as Weather Cover, Ash Remover, Heat Deflector and Grill Grip) are also included here.


Once checked, assemble your barbecue as per the instructions included.

We advise that you place the barbecue and stand in its final spot before adding in the inner ceramic housing and grill to make it easier to move.

The build time should take approximately 20-30 minutes.

Using the Barbecue

Please take note of the warnings within the instructions and adhere to these to ensure safe use of your barbecue. 

Before using the barbecue to cook food, ensure you ‘season’ it following the below instructions:

Seasoning your Maturi Barbecue

Due to the manufacturing process, your new barbecue will have residual paint and manufacturing oils - things that you’d rather not have on your burger!

The process of seasoning will burn off these impurities and sterilise your barbecue ready for those juicy cuts of meat you’re itching to grill. Don’t skip the seasoning process, this is an important step on the way to grilling perfection! Just follow the below steps -

  1. Rinse and thoroughly air dry the grill grates. There is no need to use a cleaning solution, but if you do make sure to rinse and dry thoroughly to remove all traces.
  2. Using a basting brush, (clean/new!) paintbrush or paper towel, wipe the grates all over with a high heat-resistant/smoke point oil such as vegetable, peanut or canola oil.
  3. Lightly brush/wipe the oil on the inside of the lid and insides of the pit. This will bake and seal the grill and grates once heated.
  4. Turn up the heat! Light your charcoal and burn until it is searing hot.
  5. Let it burn for 30-40 minutes. The smoke and heat will work their magic and start to create the perfect non-stick surface. During this process the grates will change in appearance from shiny stainless steel and will discolour and darken - This is completely normal and signs the process is working!
  6. Let the charcoal burn off and let the grill cool. Your barbecue is now seasoned!
